Beef Enchiladas
- 1 1/2 lb. ground round (may substitute chicken or turkey)
- 1/2 tsp. salt
- black pepper and garlic to taste
- 1 medium chopped onion
- 1 can mild enchilada sauce
- 8 flour tortillas
- 1/3 c. margarine
- 1/3 c. flour plus 1 Tbsp.
- 3 cubes chicken bouillon
- 2 c. hot water
- 1 can chopped, drained green chiles
- 8 oz. sour cream (may use nonfat sour cream)
- 3 Tbsp. grated cheese
- Melt margarine.
- Add flour.
- Set aside.
- Mix 3 cubes chicken bouillon into 2 cups of hot water.
- Pour into the flour and margarine for sauce.
- Cook until it thickens.
- Stir in the can of green chiles and sour cream.
- Pour over top of the tortillas. Sprinkle lightly with grated cheese.
- Bake at 350u0b0 for about 25 minutes.
