Moravian Sugar Cake
- 4 c. flour
- 3/4 c. sugar
- 1 1/2 tsp. salt
- 1/2 c. butter, softened
- 2 eggs
- 2 pkg. dry yeast
- 1/2 tsp. sugar
- 1 c. hot mashed potatoes (may use instant)
- 1/2 c. brown sugar
- 1 to 2 tsp. cinnamon
- 1 stick butter
- 1/2 c. sugar
- 1/2 c. milk or cream
- Mix flour, sugar and salt; stir in softened butter.
- Add eggs, one at a time.
- Dissolve yeast and 1/2 teaspoon sugar in 1 cup warm water.
- Add to egg mixture.
- Mix well.
- Add mashed potatoes.
- This batter should be thicker than cake batter but pourable.
- Add a little water if necessary.
- Allow to rise in mixing bowl until double, 1 to 2 hours.
- Stir down gently.
- Pour into a 17 x 11-inch greased pan.
- Let rise again.
- Top with brown sugar and cinnamon; dot with butter.
- Pinch gently with fingers.
- Bake 15 to 20 minutes at 400u0b0.
- While cooling, pour mix of 1/2 cup sugar and 1/2 cup milk or cream over cake.
