Moravian Sugar Cake

  1. Mix flour, sugar and salt; stir in softened butter.
  2. Add eggs, one at a time.
  3. Dissolve yeast and 1/2 teaspoon sugar in 1 cup warm water.
  4. Add to egg mixture.
  5. Mix well.
  6. Add mashed potatoes.
  7. This batter should be thicker than cake batter but pourable.
  8. Add a little water if necessary.
  9. Allow to rise in mixing bowl until double, 1 to 2 hours.
  10. Stir down gently.
  11. Pour into a 17 x 11-inch greased pan.
  12. Let rise again.
  13. Top with brown sugar and cinnamon; dot with butter.
  14. Pinch gently with fingers.
  15. Bake 15 to 20 minutes at 400u0b0.
  16. While cooling, pour mix of 1/2 cup sugar and 1/2 cup milk or cream over cake.
