Cauliflower Quiche

  1. Cook cauliflower according to package directions omitting salt; drain well and coarsely chop.
  2. Place cauliflower on paper towels and squeeze until barely moist.
  3. Coat a 9-inch pie plate with cooking spray.
  4. Layer cauliflower, green pepper, onion and cheese in pie plate.
  5. Combine remaining ingredients in container of electric blender; process 15 seconds or until well blended. Pour into pie plate.
  6. Bake at 375u0b0 for 30 to 35 minutes or until set.
  7. Let stand 5 minutes before serving.
  8. Yield:
  9. 6 servings (about 167 calories per serving).
