Cauliflower Quiche
- 1 (8 oz.) pkg. frozen cauliflower
- vegetable cooking spray
- 1/2 c. chopped green pepper
- 1/3 c. finely chopped onion
- 1 c. (4 oz.) shredded low-fat Cheddar cheese
- 1 c. skim milk
- 3 eggs
- 1/2 c. biscuit mix
- 1/4 tsp. paprika
- 1/8 tsp. pepper
- Cook cauliflower according to package directions omitting salt; drain well and coarsely chop.
- Place cauliflower on paper towels and squeeze until barely moist.
- Coat a 9-inch pie plate with cooking spray.
- Layer cauliflower, green pepper, onion and cheese in pie plate.
- Combine remaining ingredients in container of electric blender; process 15 seconds or until well blended. Pour into pie plate.
- Bake at 375u0b0 for 30 to 35 minutes or until set.
- Let stand 5 minutes before serving.
- Yield:
- 6 servings (about 167 calories per serving).
