Date Swirl Cookies
- 3/4 lb. chopped dates
- 1/3 c. water
- 2 c. sifted flour
- 1/4 tsp. salt
- 1/2 c. brown sugar
- 2 eggs
- 1/3 c. sugar
- 1/2 c. chopped nuts
- 1/2 tsp. baking powder
- 1/2 c. shortening
- 1/2 c. white sugar
- 1/2 tsp. soda
- Combine dates, 1/3 cup sugar and 1/3 cup water in saucepan. Cook over low heat, stirring constantly until pasty, about 2 minutes.
- Add chopped nuts.
- Let cool.
- Sift together flour, baking powder, soda and salt.
- Cream together shortening and brown and white sugars.
- Add eggs and mix well.
- Stir in with dry ingredients.
- Toss dough on lightly floured board.
- Roll out 1/4-inch thick (can divide and make 2 rolls).
- Spread date mixture over dough.
- Roll up like a jelly roll and wrap in wax paper. Chill overnight in refrigerator.
- Cut in slices.
- Bake on lightly greased cookie sheet at 350u0b0 for 12 to 15 minutes.
- Makes 4 to 5 dozen.
