Weeknight Fajitas

  1. In a large bowl, pour dressing over chicken, green bell pepper, onion, garlic and oregano.
  2. Toss lightly.
  3. Refrigerate at least 10 minutes.
  4. Drain. Stir-fry chicken mixture until chicken is browned and no longer pink.
  5. Stir in tomatoes.
  6. Wrap tortillas in dampened paper towels.
  7. Microwave on High (100%) for 45 seconds to 1 1/2 minutes or until softened.
  8. Fill tortillas with chicken mixture.
  9. Serve with salsa, sour cream, shredded cheese, refried beans or guacamole.
  10. Makes 4 servings.
