New Orleans Gumbo
- 1 lb. salt pork
- 1 fryer chicken, cut up
- 2 lb. hot sausage, cut up
- 2 lb. crab legs
- 1 lb. ham, cubed
- 2 to 3 tomatoes or 2 small cans whole tomatoes
- 2 to 3 lb. shrimp, shelled
- 2 to 3 onions, chopped
- celery, chopped
- 1 lb. okra, sliced
- salt and pepper to taste
- 1 1/2 tsp. file powder
- Fry salt pork in heavy skillet until crisp.
- Add flour to slightly thicken and make a roux (gravy).
- Pour mixture into a large kettle of water.
- Add cut up chicken, ham and sausage.
- Cook until chicken is done.
- Add celery, tomatoes and onion.
- Cook for 20 minutes.
- Add okra, crab legs and shrimp.
- Cook until okra is tender.
- Add file powder.
- Serve over hot, steaming rice.
