New Orleans Gumbo

  1. Fry salt pork in heavy skillet until crisp.
  2. Add flour to slightly thicken and make a roux (gravy).
  3. Pour mixture into a large kettle of water.
  4. Add cut up chicken, ham and sausage.
  5. Cook until chicken is done.
  6. Add celery, tomatoes and onion.
  7. Cook for 20 minutes.
  8. Add okra, crab legs and shrimp.
  9. Cook until okra is tender.
  10. Add file powder.
  11. Serve over hot, steaming rice.
