Shrimp With Tomato Sauce

  1. Remove stems, seed and membranes from chile; chop chile.
  2. Cook and stir chile, onion and garlic in butter in 2-quart saucepan until onion is tender.
  3. Add tomatoes, celery, lemon juice, salt, sugar and pepper.
  4. Heat to boiling; reduce heat.
  5. Simmer, uncovered, for 15 minutes.
  6. Stir shrimp into tomato sauce; heat to boiling.
  7. Reduce heat, cover and simmer 5 minutes.
  8. Serve over rice.
  9. Garnish with parsley.
