Marshmallow Cherry Bars
- 3/4 c. margarine
- 1/3 c. brown sugar
- 1 1/2 c. flour
- 2 envelopes unflavored gelatin
- 1/2 c. cold water
- 2 c. sugar
- 1 (8 oz.) jar cherries, chopped
- 1/2 c. chopped almonds
- 3 drops red food coloring
- 1/2 tsp. almond extract
- 1/2 c. cherry juice and water
- Combine margarine, brown sugar and flour and press in ungreased pan.
- Bake in 325u0b0 oven for 30 minutes; cool.
- Soften gelatin in water.
- Combine white sugar and juice drained from cherries and water to make 1/2 cup.
- Bring to a boil and boil for 2 minutes.
- Remove and stir in softened gelatin.
- Beat at medium speed until very stiff, about 20 minutes.
- (Mixture climbs beaters as it thickens.)
- Fold in cherries, nuts, food coloring and almond extract.
- Spread on top of baked crust.
- Let stand at room temperature until it sets.
