Curried Shrimp
- 1 c. Crisco or chicken fat
- 1 large onion, chopped
- 1 large apple, chopped
- 1 c. celery, chopped
- 2 tsp. curry powder
- 5 Tbsp. flour
- 1 Tbsp. lemon juice
- 1 c. x cream
- 1/2 tsp. salt
- dash of black pepper
- 2 c. shrimp, cooked
- 1/2 c. seedless raisins
- 2 Tbsp. chutney
- 2 1/2 c. chicken broth
- Melt Crisco in a heavy skillet.
- Add apple and onion; cook gently for 5 minutes.
- Sprinkle curry powder and flour over mixture until blended.
- Remove from heat and gradually add chicken broth and lemon juice.
- Then add cream and mix well.
- Return to fire and cook until thick.
- Add salt and pepper.
- Add shrimp, raisins and chutney; simmer for 15 minutes.
- Do not overcook. Serves 4 to 5.
