Vegetarian Burritos

  1. Heat tortillas according to package directions.
  2. Heat olive oil in a large skillet.
  3. Add carrot, onion and garlic.
  4. Cook, stirring constantly, 2 minutes.
  5. Stir in tomato sauce and next 7 ingredients.
  6. Cover and simmer 5 minutes.
  7. Spoon about 1/2 cup vegetable mixture down centers of warm tortillas.
  8. Sprinkle with cheese.
  9. Fold sides over filling.
  10. Serve immediately with salsa and guacamole.
