Roast Chicken Italiana
- 1 (4 to 4 1/2 lb.) roasting chicken
- 1 1/2 tsp. salt
- 1 tsp. pepper
- 1/2 tsp. onion powder
- 1 1/2 c. parsley
- 1 Tbsp. basil leaves
- 1/2 tsp. poultry seasoning
- 2 tsp. salt
- 1/2 tsp. pepper
- 1/2 tsp. garlic powder
- 2 c. tomato juice
- parsley sprigs (to garnish)
- Sprinkle outside and cavity of chicken with salt, pepper and onion powder.
- Place on rack in roasting pan.
- In blender, combine parsley, basil leaves, poultry seasoning, salt, pepper, garlic powder and tomato juice.
- Run at medium speed 1 minute or until mixture is smooth.
- Brush chicken with tomato-herb mixture.
- Roast chicken at 375u0b0 (moderate oven) 2 hours and 20 minutes or until chicken is cooked throughout (drumstick moves easily).
- Serve garnished with parsley.
- Remove skin.
- Makes 6 servings.
