Oriental Noodle And Pasta Salad
- 1 3/4 c. (about 7 oz.) uncooked rotini or radiatore pasta
- 1 1/2 c. thawed frozen sugar snap peas, drained
- 2/3 c. thinly sliced carrots
- 3 thin red onion slices, quartered
- 1/3 c. oil
- 2 Tbsp. sugar
- 1 (3 oz.) pkg. instant Oriental noodles (i.e. Ramen Pride), with flavor packet
- 1 Tbsp. toasted sesame seed
- 1/4 to 1/3 c. cashews
- Bring a large pot of water to a boil.
- Blanch carrots until crisp-tender, remove from pot with slotted spoon.
- Cook pasta in same water to desired doneness, drain and rinse with cold water. In a large bowl, combine pasta, sugar snap peas, carrots and onion.
- In a small bowl, combine oil, sugar and contents of Oriental flavor packet, blending well. Pour over pasta mixture; toss to coat.
- Cover and chill at least 1 hour to blend flavors. Just before serving, break the uncooked instant noodles into pieces and cashews in half.
- Toss sesame seed with chilled salad. Scatter noodle and cashew pieces over top of salad.
- Serves ten.
