Caramelized Onion Sauce

  1. Cook onions in oil and butter, covered, over moderately-low heat, stirring occasionally, for 45 minutes.
  2. Add sugar and vinegar and cook, uncovered, over moderately-high heat, stirring, for 15-20 minutes, or until onions are golden.
  3. Stir in wine, broth and 1 cup water, bring to a boil and simmer for 5 minutes.
  4. Add cheese, stirring, until it is melted.
  5. Stir in parsley and season to taste and serve immediately.
  6. Enough for 1 lb pasta.
  7. Fusilli is good.
