Mandarin Orange Salad
- 1 pkg. orange/pineapple Jell-O
- 1 pkg. lemon Jell-O
- 1 c. boiling hot water
- 3 c. cold water
- 1 (20 oz.) can crushed pineapple (save juice)
- 1 or 2 (if you like) cans mandarin oranges (save juice)
- 1/2 c. sugar
- 3 Tbsp. flour
- 1 c. pineapple/orange juice
- 1 egg
- 3 Tbsp. margarine
- 8 oz. Cool Whip
- 1/3 c. grated Cheddar cheese
- Mix flour and sugar together until smooth.
- Stir in a small amount of the pineapple-orange juice and mix until smooth.
- Add the egg and beat well (with spoon).
- Add the rest of the pineapple juice while stirring, then add the butter.
- Cook over medium-low heat, stirring constantly.
- When mixture comes to a boil, remove from the heat and cool.
- After cooled, fold in Cool Whip.
- Spread over Jell-O.
- Sprinkle Cheddar cheese on top.
