Ham And Swiss On Noodles
- 16 oz. uncooked egg noodles
- 1/4 c. sliced green onion
- 1/2 c. margarine, divided
- 1 (4 oz.) can sliced mushrooms, drained
- 1 (10 oz.) pkg. frozen peas, thawed and drained
- 1/4 c. all-purpose flour
- 3 c. milk
- 1/2 tsp. salt
- 1/2 tsp. pepper
- 2 c. (8 oz.) shredded Swiss cheese
- 2 c. cubed cooked ham
- 1 c. chopped canned tomatoes, drained
- Cook noodles; drain.
- Set aside and keep warm.
- Saute green onion in 2 tablespoons margarine.
- Add mushrooms and peas and cook until heated.
- Remove from pan and set aside.
- Melt remaining margarine in pan; add flour.
- Stir until smooth.
- Gradually add milk.
- Cook over medium heat, stirring constantly until mixture is thickened and bubbly.
- Stir in salt and pepper.
- Add cheese and stir until smooth.
- Add vegetables, ham and tomatoes.
- Mix well.
- Cook until heated thoroughly.
- Serve over noodles.
