Stuffed Chicken Quarters

  1. Prepare stuffing.
  2. In 2-quart saucepan over medium heat, melt margarine.
  3. Add zucchini and cook until tender, about 2 minutes, stirring frequently.
  4. Remove from heat.
  5. Into saucepan, tear bread into small pieces.
  6. Stir in egg, cheese, pepper and salt.
  7. Preheat oven to 400u0b0.
  8. Loosen skin on each chicken quarter by pushing fingers between skin and meat to form a pocket.
  9. Put in stuffing. Place chicken in 13 x 9-inch baking pan.
  10. Bake 50 minutes or until fork-tender.
  11. To serve, remove chicken to platter.
  12. Brush with honey and sprinkle with salt.
