Stuffed Chicken Quarters
- 3 Tbsp. margarine
- 2 medium zucchini, shredded
- 3 slices soft bread
- 1 egg
- 1/2 c. shredded Swiss cheese
- 1/8 tsp. pepper
- salt
- 4 chicken quarters
- 2 Tbsp. honey
- Prepare stuffing.
- In 2-quart saucepan over medium heat, melt margarine.
- Add zucchini and cook until tender, about 2 minutes, stirring frequently.
- Remove from heat.
- Into saucepan, tear bread into small pieces.
- Stir in egg, cheese, pepper and salt.
- Preheat oven to 400u0b0.
- Loosen skin on each chicken quarter by pushing fingers between skin and meat to form a pocket.
- Put in stuffing. Place chicken in 13 x 9-inch baking pan.
- Bake 50 minutes or until fork-tender.
- To serve, remove chicken to platter.
- Brush with honey and sprinkle with salt.
