Sweet-N-Sour Pork
- 1 lb. lean pork, cubed
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 1/2 medium onion
- 1 green pepper
- garlic to taste
- 1 can pineapple tidbits
- 1 egg, beaten
- oil for frying
- 1 Tbsp. flour
- 3 Tbsp. cornstarch
- 3 Tbsp. ketchup
- 3 Tbsp. vinegar
- 3 Tbsp. sugar
- 1 Tbsp. soy sauce
- 1/2 c. water
- Cube pork, sprinkle with salt and pepper and set aside.
- Cube onion and pepper into chunks.
- Drain pineapple, reserving juice. Sprinkle garlic over pepper and onion.
- Beat egg and mix in flour and 1 tablespoon cornstarch.
- Coat pork with this batter and deep fry in oil until brown.
- Remove pork and drain.
- Discard oil.
- Next make sauce by combining the water, ketchup, vinegar, sugar, soy sauce and pineapple juice.
- Carefully add in cornstarch, stirring constantly until smooth and thickened over low heat.
- Saute onion and pepper until tender crisp, drain any oil, add pineapple, add pork, add sauce, stir and simmer 10 minutes.
- Serve over rice.
