Cheeseburger Pie
- 1 lb. ground beef
- 1 (5 oz.) pkg. instant mashed potato flakes (2 1/4 c.), divided
- 1 egg
- 1/4 c. ketchup
- 1 Tbsp. dried onion flakes
- 1 1/2 tsp. salt, divided
- 6 slices American cheese, divided
- 1 c. hot water
- 2 Tbsp. butter or margarine
- Combine ground beef, 1 1/3 cups instant mashed potato flakes, 1 cup milk, egg, ketchup, onion, 1 teaspoon salt and 1/8 teaspoon pepper.
- Spread into 9-inch pie plate.
- Cook at Medium-high 6 /12 to 7 1/2 minutes; drain.
- Arrange 2 slices cheese on top.
- Let stand, loosely covered, 7 minutes.
- Meanwhile, in medium glass bowl, combine water, butter, remaining milk, salt and pepper. Cook at Medium-high 5 to 6 minutes.
- Add remaining instant mashed potato flakes and cheese, diced and stir until potatoes are fluffy.
- Spread over "cheeseburger".
- Cook at Medium-high 2 to 3 minutes or until heated through.
- Yield:
- 4 servings.
