Healthy Summer Calabacitas

  1. Heat oil in a pan over medium heat, add onions and cook until transparent.
  2. Add green fresh green bell peppers and cook for 1 minute or until slightly softened.
  3. Add garlic and cook for 30 seconds or until fragrant, but not burned.
  4. Add zucchini and water and cook until slightly softened, about 3 minutes.
  5. Add tomatoes and corn and bring to a boil, then lower heat and simmer for 5 minutes.
  6. Season with salt and pepper.
  7. Sprinkle with cheese and serve warm. Great in tortillas or served with re-fried beans.
