Italian-Baked Zucchini

  1. Heat oven to 450u0b0.
  2. Trim zucchini and slice into 1/2 inch disks.
  3. Sprinkle 1 T olive oil onto bottom of 9 by 13 pan.
  4. Add zucchini and sprinkle it w/ salt and pepper.
  5. Drizzle 1 T olive oil over this.
  6. Bake for 10 minute.
  7. While it is baking mix cheese, bread crumbs, capers, and oregano together.
  8. Add remaining oil and stir till crumbs are moistened.
  9. Remove zucchini from oven and sprinkle w/ vinegar then stir.
  10. Sprinkle bread crumbs on top.
  11. Return to a 400u0b0 degree oven for 20 to 30 minutes.
  12. Serve hot.
