Bran Apple Coffee Cake
- 3 1/2 c. flour
- 1 tsp. ground cinnamon
- 3 c. whole bran cereal (Bran Buds)
- 2 eggs
- 1 (8 oz.) can (1 c.) applesauce
- 1/2 c. packed brown sugar
- 1/2 c. butter or margarine
- 1 c. sugar
- 1/3 c. butter or margarine
- 1 c. buttermilk
- 2 1/2 tsp. baking soda
- Combine 1 cup flour, brown sugar and cinnamon.
- Cut in 1/2 cup butter.
- Combine 1 cup cereal with 1 cup boiling water; set aside. Cream the granulated sugar and 1/3 cup butter.
- Beat in eggs. Mix in milk, applesauce and softened bran.
- Combine the remaining flour, soda and 1/2 teaspoon salt.
- Add the remaining cereal and egg mixture; blend well.
- Pour into two greased 9 x 9 x 2-inch baking pans.
- Sprinkle half of the cinnamon mixture atop each. Bake at 400u0b0 for 30 to 35 minutes.
