Shrimp Stuffed Peppers
- 1 tsp. salt
- 3 cloves garlic
- 6 green peppers, tops cut off and cleaned
- 1/2 c. raw rice
- 1 can cream of mushroom soup
- juice of 1 lemon
- dash of pepper
- 2 Tbsp. grated onion
- 2 Tbsp. butter
- 1 tsp. parsley
- 1 lb. shrimp, or 2 (5 oz.) cans or 10 to 12 oz. frozen, thawed under running water
- 1 c. grated Swiss cheese
- 6 pats of butter
- paprika
- In cooking pot, size to hold 2 quarts of water, put salt, garlic and peppers.
- Bring to a boil and boil 10 minutes.
- In separate pot, boil 1/2 cup raw rice, drain.
- Mix soup, lemon juice, pepper, onion and butter.
- Heat, then add rice, parsley and shrimp.
- Stuff peppers with shrimp mixture and top with 1 cup grated Swiss cheese, 6 pats of butter and paprika (for color). Bake at 350u0b0 for 40 minutes.
