Buffalo Chips (Cookies)
- 2 c. melted butter
- 2 c. brown sugar
- 1 (12 oz.) pkg. semi-sweet chocolate chips
- 1 c. pecans, chopped
- 1 c. coconut
- 2 c. uncooked Quick cook oats
- 2 tsp. baking soda
- 2 tsp. baking powder
- 2 c. crushed cornflakes
- 2 c. sugar
- 4 eggs
- 2 Tbsp. vanilla
- 1 tsp. salt
- 4 c. flour
- Blend butter and sugars.
- Stir in eggs and vanilla.
- Sift salt, flour, soda and baking powder.
- Add to bowl.
- Mix well. Stir in oats, cornflakes, chocolate chips, pecans and coconut. Place on lightly greased cookie sheet.
- Bake for 12 to 15 minutes at 350u0b0.
- Cookies will be soft and chewy if you don't bake them until brown.
- Makes 36 big cookies.
