Chocolate Cherry Nut Muffins
- 2 cups flour
- 1/2 cup sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 tablespoon lemon zest, grated
- 3/4 cup semi-sweet chocolate chips, miniature
- 1 cup cherries, pitted and chopped (about 22)
- 1/2 cup almonds, slivered and blanched
- 1 cup milk
- 1/3 cup oil
- 1/3 cup butter, melted and cooled
- 1 egg, beaten lightly
- In a bowl, sift together the flour, sugar, BP and salt.
- Stir in the zest, chips and almonds.
- Combine the mixture well and stir in the chopped cherries.
- In a small bowl, whisk together the milk, oil, butter and egg.
- Add this to the flour mixture.
- Stir until batter is just combined.
- Fill sprayed muffin cups.
- Bake at 400 deg. for 20-25 minutes.
- Makes 15 muffins.
