Individual Blueberry Pies

  1. Preheat oven to 425u0b0.
  2. Beat egg white.
  3. Rinse blueberries in colander.
  4. Roll berries in confectioners sugar.
  5. Empty pie crust mix into a large bowl.
  6. Add butter and egg yolk, cutting into pastry mix.
  7. Sprinkle water and mix until dough holds together; chill.
  8. On lightly floured board, roll out to 1/8-inch thick.
  9. Cut dough into rectangle pieces.
  10. Sprinkle with mixture of sugar and cinnamon.
  11. Place mound of blueberries on one half and fold crust over berries.
  12. Seal 3 edges with fork.
  13. Seal tart with egg white. Bake on ungreased baking sheet for 15 minutes.
