Estofadong Carne(Tangy Braised Beef)
- 1 1/2 lb. stewing beef, cubed
- 1/2 c. flour
- 1 1/2 tsp. salt
- 1/8 tsp. pepper
- 1/4 c. cooking oil
- 2 cloves garlic, minced
- 1 medium onion, chopped
- 1 medium tomato, chopped
- 1/4 lb. green beans
- 1 medium carrot, cut into 1-inch lengths
- 1/4 c. vinegar
- 1 bay leaf
- Season beef with salt and pepper.
- Let stand 10 to 15 minutes. Dredge with flour and brown in hot oil.
- Pour off all but 2 tablespoons of oil in pan; push beef to one side and saute garlic, onion and tomatoes until mixture is mushy.
- Add vinegar, bay leaf and enough water to cover beef.
- Bring to a boil; lower heat and simmer for 1 1/2 to 2 hours or until beef is tender.
- Taste for seasoning.
- Bring back to boiling; add green beans and carrots and cook until vegetables are done (about 10 minutes).
- Serves 4 to 6.
