Estofadong Carne(Tangy Braised Beef)

  1. Season beef with salt and pepper.
  2. Let stand 10 to 15 minutes. Dredge with flour and brown in hot oil.
  3. Pour off all but 2 tablespoons of oil in pan; push beef to one side and saute garlic, onion and tomatoes until mixture is mushy.
  4. Add vinegar, bay leaf and enough water to cover beef.
  5. Bring to a boil; lower heat and simmer for 1 1/2 to 2 hours or until beef is tender.
  6. Taste for seasoning.
  7. Bring back to boiling; add green beans and carrots and cook until vegetables are done (about 10 minutes).
  8. Serves 4 to 6.
