Low-Fat Nutty Pumpkin Bread
- 2 1/4 c. plain flour
- 1/2 c. sugar
- 1 1/2 tsp. cinnamon
- 1/2 tsp. salt
- 1/2 tsp. soda
- 2 tsp. baking powder
- 2 eggs, beaten
- 2 1/2 Tbsp. liquid sweetener
- 1 c. cooked pumpkin
- 1 (8 oz.) can crushed pineapple with its own juice (no sugar added)
- 1/3 c. Grape-Nuts cereal
- Sift together flour, sugar, cinnamon, salt, soda and baking powder.
- In large mixing bowl add beaten eggs, sweetener, pumpkin, pineapple and juice.
- Mix well; then add half the dry ingredients, mix again and gradually add the rest of dry ingredients, mix well. Then fold in Grape-Nuts cereal. Spray well a Bundt pan or 2 small loaf pans.
- Bake at 350u0b0 for 1 hour or until done when tester comes out clean when inserted in center.
