Hawaiian Stuffed Chicken Breasts
- 2/3 c. hot water
- 2 Tbsp. margarine
- 2 c. Stove Top dressing (chicken flavor)
- 1 (8 1/4 oz.) can crushed pineapple (with syrup)
- 4 boneless, skinless chicken breasts
- 1 medium green pepper, chopped
- 2 Tbsp. brown sugar
- 2 Tbsp. vinegar
- 1/4 tsp. ground ginger
- Prepare oven at 400u0b0.
- Mix hot water and margarine in bowl. Stir in stuffing mix, pepper and 1/2 of the pineapple with syrup. Beat out the chicken breasts flat.
- Spoon stuffing on chicken and roll tightly and hold with toothpicks.
- Place in a 9-inch square baking dish with extra stuffing in center.
- Mix remaining pineapple, syrup, sugar, vinegar and ginger.
- Spoon over chicken.
- Bake 30 minutes or until thoroughly done.
