Mary Ann'S Cauliflower Soup(Serves 4)
- 1 medium cauliflower
- 1/4 c. chopped onion
- 1/4 c. margarine or butter
- 2 c. milk
- 1/4 c. flour
- 3 c. chicken broth
- 1 tsp. Worcestershire sauce
- 1 hunk Velveeta cheese (1 c.)
- 3 chicken bouillon cubes
- 3 c. water
- Add 3 chicken bouillon cubes to 3 cups water.
- Cut or break up cauliflower into flowerets.
- Cook in small amount of water until tender.
- Drain.
- Cut up or lightly mash real fine.
- Saute onions in margarine only until tender, do not brown.
- Add flour and mix until well blended.
- Add chicken broth, milk and Worcestershire sauce.
- Stir with whisk until mixture thickens slightly.
- Add cheese and cauliflower.
- Bring to boil, reduce heat and keep hot until ready to serve.
