Roast Pork, Stuffed With Prunes And Apples
- 1 tsp. butter
- 3 tsp. oil
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 1/2 tsp. dried rosemary crumbs
- 1 1/2 tsp. dried leaf thyme crumbs
- 2 large, tart apples, cored and chopped
- 2 tsp. brown sugar
- 2 tsp. salt
- 24 sliced prunes
- 1 (5 lb.) boneless pkg. loin roast, trimmed
- 1/2 tsp. garlic powder
- 1/2 tsp. sage
- 2 1/2 to 3 c. apple cider
- 1/2 tsp. rosemary
- 3 Tbsp. flour
- Heat butter and oil in skillet.
- Add onion, garlic, 1/2 teaspoon rosemary and 1/2 teaspoon thyme.
- Saute about 2 minutes. Add next 3 ingredients.
- When apples are softened, add prunes. Remove from heat.
