Luscious Lime Cheesecake
- 1 pkg. yellow cake mix
- 4 eggs
- 1/4 c. vegetable oil
- 2 (8 oz.) pkg. cream cheese, softened
- 1 (14 oz.) can sweetened condensed milk
- 2 tsp. grated fresh lime peel
- 1/4 to 1/3 c. lime juice
- 1 tsp. vanilla
- 1 (4 oz.) container nondairy whipped topping
- lime slices (for garnish)
- Preheat oven to 300u0b0.
- Reserve 1/2 cup dry cake mix.
- In large mixer bowl, combine remaining dry cake mix, 1 egg and oil.
- Press evenly on bottom and 1 1/2 inches up sides of greased 13 x 9 x 2-inch baking dish.
- In same bowl, beat cheese until fluffy.
- Beat in sweetened condensed milk until smooth.
- Add remaining eggs and reserved cake mix; beat one minute at medium speed.
- Stir in lime peel, juice and vanilla.
