Sandy'S Manicotti
- 1 lb. ground beef or Italian sausage
- 1/2 c. chopped onion
- 2 cloves garlic, pressed (can substitute 1 tsp. crushed garlic)
- 4 c. tomato juice
- 1 (6 oz.) can tomato paste
- 1 tsp. salt
- 1/2 tsp. pepper
- 2 tsp. oregano
- 1 tsp. sugar
- 2 eggs
- 3 c. or 12 oz. shredded Mozzarella cheese
- 16 oz. Ricotta cheese
- 1 (10 oz.) pkg. frozen spinach, thaw and drain
- 1/2 c. grated Parmesan cheese
- 1/2 c. grated Romano cheese
- 16 to 20 manicotti noodles
- Brown meat with garlic and onion; drain grease.
- Combine 2 cups tomato juice, tomato paste, oregano, salt, pepper and sugar with meat.
- Stir and simmer while preparing filling.
