Apple-Oat Muffins(A Healthy Breakfast Start)
- 1 1/3 c. rolled oats
- 1 c. skim milk
- 1 c. low-fat yogurt
- 1/4 c. light corn syrup
- 3 Tbsp. vegetable oil
- 1 large egg white or Egg Beater equivalent
- 3/4 c. all-purpose flour
- 1/2 c. whole wheat flour
- 1 1/2 tsp. baking powder
- 1 tsp. ground cinnamon
- 1/2 tsp. baking soda
- 1/2 tsp. salt
- 1/4 tsp. ground nutmeg
- 1 1/4 c. finely chopped tart apples (Granny Smith)
- Preheat oven to 425u0b0.
- Lightly oil or spray 12 muffin cups with nonstick cooking spray.
- In a bowl, whisk together oats, milk, sugar, corn syrup, oil and egg white.
- In another bowl, mix flours, baking powder, cinnamon, baking soda, salt and nutmeg. Stir apples into flour mixture until evenly distributed.
- Stir milk mixture into flour mixture, just until moistened.
- Spoon batter into muffin cups.
- Bake 15 to 20 minutes or
- until golden brown.
- Makes 12 muffins.
