Rigatoni And Cheese Casserole
- 1 lb. ground beef
- 1 c. chopped onion
- 2 cloves garlic, minced
- 1 (30 oz.) jar meatless spaghetti sauce
- 1 lb. rigatoni, cooked and drained
- 1/4 tsp. pepper
- 32 oz. cottage cheese
- 1/2 tsp. salt
- 2 c. shredded Mozzarella cheese
- grated Parmesan cheese
- Lightly brown beef, onion and garlic.
- Stir in spaghetti sauce and pepper.
- Simmer 10 minutes.
- In a large bowl, stir together cottage cheese and salt.
- Add rigatoni; toss to coat well.
- Spoon half of the rigatoni mixture into a 9 x 13-inch baking dish.
- Top with 1 cup of the Mozzarella cheese and half the meat sauce. Repeat.
- Sprinkle with Parmesan cheese.
- Bake in a 350u0b0 oven for 35 minutes or until heated.
- Serves 12.
