Sweet Potato Bread
- 2 c. all-purpose flour
- 2 1/2 tsp. baking powder
- 1/2 tsp. salt
- 1/4 tsp. ground allspice
- 1/4 tsp. ground nutmeg
- 1 c. mashed, cooked sweet potatoes
- 1/2 c. firmly packed brown sugar
- 1/4 c. unsalted margarine, melted
- 3 Tbsp. skim milk
- 2 eggs
- 1 tsp. orange rind
- 1/4 c. chopped pecans
- vegetable cooking spray
- Combine first 4 ingredients in a large bowl; set aside. Combine potatoes, sugar, margarine, milk, eggs, orange rind and nuts, beating well. Add to dry ingredients, stirring until just moistened. Pour batter into 9 x 5 x 3 loaf pan coated with vegetable cooking spray. Bake at 350u0b0 for 45 minutes or until wooden toothpick inserted in center comes clean. Cool in pan 10 minutes; remove from pan and cool completely. Yield: 1 loaf, 18 1/2 slices (122 calories per slice).
