Heirloom Relish

  1. Combine first 7 ingredients; let stand overnight.
  2. Drain well; discard brine.
  3. In a 6-quart pan, combine vegetables, vinegar, sugar, mustard and celery seed; simmer 30 minutes.
  4. Combine flour, dry mustard and turmeric, add to relish and cook 10 minutes.
  5. Pack in hot, sterilized jars; process in hot water bath for 10 minutes.
  6. Makes 7 1/2 pints.
