Blueberry Buckle, Sugar-Free
- 2 cups all-purpose flour
- 3/4 cup Splenda sugar substitute (1/3 cup Splenda Sugar Blend for Baking)
- 2 3/4 teaspoons baking powder
- 3/4 teaspoon salt
- 1/4 cup butter flavor shortening
- 3/4 cup skim milk
- 1 egg
- 2 cups fresh blueberries
- 1/2 cup Splenda brown sugar blend
- 1/3 cup all-purpose flour
- 1/2 teaspoon cinnamon
- 1/4 cup butter, softened
- Heat oven to 375.
- Grease 8x8x2 or 9x9x2 pan.
- Blend all ingredients, down to blueberries (remaining ingredients are for topping.
- Beat vigorously 1/2 minute.
- Spread in pan.
- Prepare topping by mixing all ingredients.
- Sprinkle over batter.
- Bake 40-50 minutes.
