Spaghetti Pie
- 3/4 lb. zucchini, shredded (1/2 c.)
- 1 large onion, chopped
- 1 large clove garlic, crushed
- 1/2 tsp. dried basil leaves, crushed
- 1 c. half and half
- 3 large eggs, beaten
- 1 pkg. (8 oz.) spaghetti, cooked
- 1/4 lb. sliced Prosciutto or Virginia ham, cut in strips
- 1/2 c. shredded Mozzarella cheese
- 1/4 c. grated Romano cheese
- 1 jar (4 oz.) roasted red peppers, chopped
- In microwave-safe 10-inch quiche dish, combine zucchini, onion, garlic and basil.
- Cover with plastic wrap; vent.
- Cook on High 3 minutes.
- Add remaining ingredients, 1/2 teaspoon salt and 1/8 teaspoon pepper; mix well. Evenly spread mixture in dish. Cook, uncovered, on High 6 minutes, rotating dish every 2 minutes and with fork, stirring cooked egg around side of dish with mixture in center.
- Cook on Medium 12 minutes or until just set in center.
- Let stand on counter 5 minutes before serving.
- Makes 8 servings.
