Ginger Cookies

  1. Grease baking sheets lightly.
  2. Start oven 10 minutes before baking at 375u0b0.
  3. Sift flour; measure and re-sift 4 times with next 3 ingredients.
  4. Cream butter and shortening until smooth; stir in flavorings.
  5. Then add sugar in 2 or 3 portions, creaming well. Beat in egg until fluffy, then stir in flour mixture and the cream alternately in 2 or 3 portions, mixing just until smooth after each.
  6. Roll out on a floured pastry cloth about 3/16-inch thick. Cut out with a 2 1/2-inch cutter or decorated cutters.
  7. Place on prepared sheet and bake 13 to 15 minutes.
  8. Remove from pan to rack immediately.
