Applesauce Cake
- 2 c. unsifted all-purpose flour
- 1 lb. light brown sugar
- 1 c. softened margarine
- 1 c. sweetened applesauce
- 1 egg
- 1/2 tsp. salt
- 2 tsp. cinnamon
- 1 tsp. baking soda, dissolved in 2 Tbsp. boiling water
- 1 c. coconut
- 1/2 c. chopped pecans
- 1/2 c. chocolate chips
- With a pastry blender, blend together flour, brown sugar and softened margarine.
- Reserve 1 cup of this mixture for topping. To the remainder, add applesauce, egg, salt, cinnamon and soda mixture.
- Mix together and pour into a buttered 9 x 13-inch pan. Into the reserved cup of mixture, add coconut, chopped pecans and chocolate chips.
- Sprinkle over cake and bake at 325u0b0 for 50 to 60 minutes.
- Cool and cut into squares to serve.
