Garnet'S Yellow Squash Relish

  1. Coarse grind squash, peppers, onions, tomatoes and cucumbers, using coarse blade/setting for grinder.
  2. Add to mixture 1/2 cup salt and let stand for 1 to 2 hours.
  3. Drain and rinse in cold water; drain again and put in large kettle with remaining ingredients.
  4. Bring to boil and simmer, uncovered, stirring occasionally.
  5. Cook 30 minutes or until desired consistency.
  6. Pour into 6 to 8 pint jars and seal.
  7. Process 5 minutes.
