Garnet'S Yellow Squash Relish
- 3 yellow squash
- 2 green peppers
- 6 green tomatoes
- 2 1/4 c. brown sugar
- 1/2 c. salt
- 1 Tbsp. each: nutmeg, dry mustard, turmeric and cornstarch
- 1/2 tsp. pepper
- 6 onions
- 1 red pepper
- 8 to 10 cucumbers
- 2 1/4 c. sugar
- 2 tsp. celery salt
- Coarse grind squash, peppers, onions, tomatoes and cucumbers, using coarse blade/setting for grinder.
- Add to mixture 1/2 cup salt and let stand for 1 to 2 hours.
- Drain and rinse in cold water; drain again and put in large kettle with remaining ingredients.
- Bring to boil and simmer, uncovered, stirring occasionally.
- Cook 30 minutes or until desired consistency.
- Pour into 6 to 8 pint jars and seal.
- Process 5 minutes.
