Lemonade Cake
- 1 (3 oz.) pkg. lemon gelatin
- 3/4 c. boiling water
- 1 1/2 c. sugar
- 3/4 c. vegetable oil
- 4 eggs
- 2 1/2 c. all-purpose flour
- 2 1/2 tsp. baking powder
- 1 tsp. salt
- 2 Tbsp. lemon juice
- 1 Tbsp. grated lemon peel
- 1 Tbsp. lemon extract
- 1 (6 oz.) can frozen lemonade
- 3/4 c. powdered sugar
- Preheat
- oven
- to
- 350u0b0.
- Dissolve
- gelatin
- in boiling water and set aside to cool.
- Mix together sugar and oil.
- Add eggs, one
- at
- atime, beating well after each addition.
- In separate bowl mix together flour, baking powder and salt.
- Add flour mixture alternately with gelatin mixture to egg mixture, beginning and
- ending
- with dry ingredients.

- Stir
- in
- lemontuice,temon peel and lemon extract. Pour
- batter
- intotreased and floured 10-inch tube pan.
- Bake 1 hour without opening door.
