Elaine'S Cheese Pie Royale

  1. Have all engredients at room temperature.
  2. Preheat oven to 375u0b0F.
  3. Crust:
  4. Make graham crackers into crumbs by placing ia plastic bag and crushing with a rolling pin or in a food processor.
  5. Combine cracker crumbs, melted butter and 2 Tablespoons sugar.
  6. Press into a 9-inch springform pan.
  7. Filling:
  8. In a mixing bowl, beat eggs thoroughly.
  9. Gradually add 1/2 cup sugar.
  10. Add cream cheese a little at a time, beating between each addition until smooth.
  11. Add 1/2 teaspoon vanilla.
  12. Pour filling into crust.
  13. Sprinkle lightly with cinnamon.
  14. Bake for 20 minutes.
  15. Cool.
  16. Topping:
  17. Increase oven temperature to 400u0b0F.
  18. Combine sour cream, 2 Tablespoons sugar and 1/2 teaspoon vanilla.
  19. Spread topping over baked filling.
  20. Bake for 5 minutes.
  21. Place in refrigerator to cool.
  22. Enjoy!
  23. Refrigerate any leftovers.
