Bertha'S Spinach Pie
- 2 (8 oz.) pkg. chopped spinach, cooked and drained
- 1 large onion, chopped
- 1/2 lb. Feta cheese, crumbled
- 1 (8 oz.) small curd cottage cheese
- 1 Tbsp. farina
- 1/2 tsp. dill weed
- salt and pepper to taste
- 1 beaten egg
- 1 Tbsp. olive oil
- 1 stick butter or margarine, melted
- 1 pkg. Apollo strudel leaves
- Combine in mixing bowl the cooked, drained spinach, onion, Feta and cottage cheeses, farina, dill and egg.
- Mix well and add olive oil.
- Working quickly, brush strudel leaves with melted butter.
- Fold in half.
- Place a small portion of filling at one end.
- Fold like a flag, triangle or individual portion for side dish.
- Brush with butter.
- Place on greased cookie sheet or pan. Bake at 375u0b0 for 12 to 15 minutes.
