Grandma Gusky'S Chewy Oatmeal Cookies (Gluten Free)
- 2/3 cup rice flour
- 1/3 cup cornstarch or 1/3 cup tapioca starch
- 2 tablespoons pea protein powder or 2 tablespoons whey protein powder
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1 tablespoon cinnamon
- 1 teaspoon salt
- 1 teaspoon xanthan gum
- 3/4 cup butter
- 1/2 cup white sugar
- 1 1/2 cups brown sugar (firmly packed)
- 3 eggs
- 1 1/2 teaspoons vanilla
- 2 1/2 cups quick oats (oatmeal)
- 1 cup walnuts (finely chopped)
- 1 cup shredded coconut
- 1/2 cup raisins
- Preheat oven to 370u0b0F.
- Sift or stir together flour, starch, baking powder, baking soda, cinnamon, salt, and xanthan gum. Set aside.
- In a large bowl, cream butter and add sugars. Mix well.
- Add eggs and vanilla, then blend in dry ingredients.
- Add oatmeal, coconut, raisins, and finely chopped nuts. Mix.
- Drop by rounded teaspoonfuls on a lightly greased cookie sheet.
- Bake at 370 F for 8 to 13 minutes, until light brown, the lesser time being more chewy, the greater time making them crunchier.
