Grandma Gusky'S Chewy Oatmeal Cookies (Gluten Free)

  1. Preheat oven to 370u0b0F.
  2. Sift or stir together flour, starch, baking powder, baking soda, cinnamon, salt, and xanthan gum. Set aside.
  3. In a large bowl, cream butter and add sugars. Mix well.
  4. Add eggs and vanilla, then blend in dry ingredients.
  5. Add oatmeal, coconut, raisins, and finely chopped nuts. Mix.
  6. Drop by rounded teaspoonfuls on a lightly greased cookie sheet.
  7. Bake at 370 F for 8 to 13 minutes, until light brown, the lesser time being more chewy, the greater time making them crunchier.
