Chicken Curry
- 1/2 c. oil
- 3/4 cube oleo
- 4 medium onions, chopped
- 1 green pepper, chopped
- 9 garlic cloves, chopped
- handful of celery leaves, chopped
- 10 dried chili peppers, crushed
- 1 1/2 tsp. cumin seed, crushed
- 4 tsp. curry powder
- 1/4 tsp. ginger
- 1/4 tsp. cayenne
- 1/4 tsp. thyme
- 1 1/2 tsp. oregano
- 2/3 can tomato sauce
- Fry on medium-high heat the oil, all spices and celery leaves until absorbed by oil and not powder.
- Add tomato sauce and cook until thick.
- Skin and cup up chicken and put in large pot. Add sauce to chicken and simmer 20 to 25 minutes.
- Add water to not quite halfway to the top of chicken.
- Cover and simmer until done.
