Gorilla Casserole(Serves 8)
- 2 1/2 lb. lean ground beef
- 2 Tbsp. vegetable olive oil
- 2 large chopped onions
- 2 c. chopped celery
- 1 1/2 c. grated carrots
- 1 1/2 lb. macaroni, shells, elbows or other shaped noodles
- 1 c. grated Parmesan cheese
- 2 (2 lb. 3 oz.) cans Italian-style tomatoes
- 1 Tbsp. salt
- 1 1/2 Tbsp. leaf oregano, crumbled
- 1 Tbsp. pepper
- 1 Tbsp. garlic powder
- 2 (10 oz.) pkg. frozen chopped spinach, slightly thawed
- Brown the ground beef in the 2 tablespoons oil (about 5 minutes). Add chopped onion, celery and grated carrots.
- Cook for another 5 minutes. Stir in the tomatoes, salt, oregano, pepper and garlic powder. Bring to a boil. Lower the heat and cover.
- Simmer for 1 hour.
