Avocado Banana And Walnut Muffins

  1. Heat oven to 375 degrees (F).
  2. Grease 12 muffin tins, or spray with nonstick vegetable oil, or line with paper cups.
  3. In a large bowl, mix avocado, bananas, eggs and milk.
  4. In a seperate bowl, whisk or sift together flour, sugar, baking soda and salt.
  5. Stir flour mixture into avocado mixture; do not over mix. Stir in walnuts.
  6. Spoon batter into prepared muffin tin; bake 15 to 20 minutes, or until tops start to brown and a toothpick inserted into a muffin comes out clean.
