Spinach Salad With Pears, Pecans And Feta(Middle East)
- 10 oz. fresh spinach, stems removed and leaves washed
- 2 large ripe but firm pears, peeled, cored and sliced
- 1/4 c. chopped pecans
- 1/4 lb. Feta cheese, crumbled
- 2 Tbsp. chopped fresh mint
- 2 Tbsp. fresh lemon juice
- 1 Tbsp. sherry vinegar
- 1 tsp. mild-flavored honey
- 1/2 to 1 tsp. Dijon mustard to taste
- 1/4 c. plain low-fat yogurt
- 1/4 c. olive oil
- salt and freshly ground pepper to taste
- Toss together the spinach, pears, pecans, Feta and mint.
- Mix together the lemon juice, vinegar, honey, mustard and yogurt. Whisk in the olive oil or shake together in a jar.
- Add salt and pepper.
- Toss with the salad just before serving.
- Serves 4.
