Cherry Cobbler
- 1/4 c. soft margarine
- 1 c. sifted flour
- 1/4 tsp. salt
- 1 can red sour pitted cherries
- 1/4 to 1/2 c. sugar
- 1/2 c. sugar
- 2 tsp. baking powder
- 1/2 c. milk
- 1 c. cherry fruit syrup, with water added to make 1 c.
- Preheat oven to 375u0b0.
- Cream butter and 1/2 cup sugar until fluffy.
- Sift dry ingredients together in another bowl; add this alternately to creamed mixture with milk.
- Beat until smooth. Pour into loaf pan or 2-quart casserole.
- Spoon drained cherries over batter.
- Sprinkle with sugar, 1/4 to 1/2 cup as needed per tartness of cherries.
- Pour 1 cup fruit juice and water mixture over top.
- Bake for 45 to 50 minutes, until top browns.
- During baking, juice goes to bottom and cakelike layer comes to the top.
